Donkey milk is not something you drink on the go. It is rare, tastes different from conventional milk, and invites you to taste it more carefully. In this post, we show you how to consciously taste donkey milk, how to prepare it properly, and which simple recipe ideas will help you best discover its flavor.
Why conscious tasting is worth it
When you try donkey milk for the first time, it is worth paying it a few minutes of attention. Those who drink slowly taste more. You may know this from wine, coffee, or cheese: only when tasting consciously do subtle differences become apparent.
With donkey milk, these differences are particularly noticeable because it stands out from cow's milk in its composition and mouthfeel. With around 6–7 g of lactose per 100 ml, it contains more milk sugar than cow's milk (approx. 4.7 g). At the same time, the fat content is usually below 1 g. The result: a mild and slightly sweet taste and a light, almost watery and fresh texture.
How to taste donkey milk step by step
- Preparation: Thaw the frozen donkey milk slowly in the refrigerator at 2–7 °C. Allow yourself enough time and follow the instructions on the label.
- Appearance: Pour a small sip into a clear glass. Donkey milk usually looks lighter and thinner than whole milk.
- Smell: Hold the glass briefly under your nose. The aroma is subtle and mild.
- Taste: Take a small sip and let it linger briefly in your mouth. Pay attention to the sweetness and the light mouthfeel.
- Comparison: If you like, try a sip of cow's milk immediately afterward. This makes the difference particularly clear.
Tasting is especially fun with a partner or in a small group. Everyone first writes down three words for appearance, aroma, and taste on their own. Then you compare your impressions. You will be surprised how differently people describe the same glass of milk. There is no right or wrong answer – it is all about tasting carefully.
We describe the taste in detail in the post What does donkey milk taste like?.

Simple ideas for mindful enjoyment
After the first tasting, you can try donkey milk in simple recipes. The fewer ingredients, the better you can taste the milk:
- Pure and chilled: The simplest option – ideal for discovering its natural flavor.
- With vanilla: A touch of vanilla highlights the mild sweetness.
- Berry smoothie: Blend donkey milk with raspberries or blueberries. The acidity of the berries and the sweetness of the milk complement each other.
- Overnight oats: Let oats soak overnight in donkey milk and serve with fruit in the morning.
- Milk coffee: Add donkey milk to a mild coffee. Because it contains little fat, it froths differently than whole milk.

Combining donkey milk and donkey cheese
Those who like donkey milk are often also curious about donkey cheese. Around 25 liters of donkey milk are needed for 1 kg of donkey cheese – making it correspondingly special. A small tasting with milk and cheese is a nice idea for an evening together with family or friends. Fresh bread, grapes, or a few nuts pair well with it.
