A dessert made from donkey milk: recipe, texture and 30 days in the fridge

A team from the University of Bari fermented donkey milk with oat flour and wheat germ oil, refined it with dark chocolate and pomegranate extract and stored and measured it refrigerated for a month.

Important: A food technology laboratory study on product development. It does not examine any effect of donkey milk or the dessert in humans.

Experimental design · switch measurement

More oats, less oil: how firm does it get?

Mean ± standard deviation. Oat flour and wheat germ oil always added up to 15 %. Dashed: a commercially available oat dessert for comparison. The chosen recipe (11.5 % oats) was derived from the model and not tested here as a separate measurement point.

Storage · runs automatically

Four measurement days in the fridge

A = 0.5 %, B = 1 % pomegranate extract. Polyphenols according to Folin-Ciocalteu (mg gallic acid equivalents per g), ABTS as a radical scavenging test in the test tube (µmol Trolox equivalents per g) – laboratory measurements, not effects. Bar length relative to the highest value of each measure.

Only three recipe points, each made once. For firmness, the model’s predictive power was moderate (predicted R² 0.66).

Chosen recipeCALCULATED

11.5 % oats and 3.5 % oil were derived from the model, not measured beforehand as a trial point.

TastingSMALL

Ten trained panellists, 5-point scale. Results only as a graph; there was no consumer survey.

Storage period30 DAYS

Longer storage was not tested – the authors themselves name this as the next step.

Gaps & typosNOTED

One value for cohesiveness reads “−0.60 ± 5.73” – probably a misprint. Breed and lactation stage of the milk are missing.

InterestsOK

No conflicts of interest declared, no funding named. The pomegranate extract was provided by a supplier.

TOTAL: product development in the laboratory. Measurements of texture, colour and storage – no statement about effects.

Editorial assessment: The authors describe the dessert as a possible functional product. This was not examined, and we do not adopt it. Same research group and same milk source as Study 75 (cheese from ultrafiltered donkey milk).

Research question for DON DONKEY’S®

What role does thin donkey milk play in recipes?

Donkey milk is low in protein and fat, which is why the dessert needed oats and oil for a creamy texture. We would like to explain factually and with sources how donkey milk behaves in recipes.
