Donkey milk is rather thin and light in the mouth, significantly less creamy than whole milk. The reason is its low fat content, usually under 1 g per 100 ml. At the same time, many people perceive a gentle sweetness because donkey milk contains about 6 to 7 g of lactose per 100 ml. This post is primarily about consistency: where it comes from, how temperature and preparation change it, and how to consciously taste donkey milk.
How does donkey milk feel in the mouth?
Those accustomed to whole milk often find donkey milk surprisingly light. It flows more like low-fat milk and leaves almost no film on the palate. The mouthfeel is often described as clear, fresh, and light.
This lightness is directly related to its composition. Donkey milk contains about 0.3 to 1.8 g of fat per 100 ml, usually under 1 g. Fat provides creaminess and richness in milk. When it is largely absent, the milk feels leaner in the mouth. The protein content of about 1.5 to 1.9 g per 100 ml also contributes to the rather thin appearance.
And the taste?
In terms of taste, donkey milk is usually described as mild and slightly sweet. The sweetness comes from natural lactose: with about 6 to 7 g of lactose per 100 ml, donkey milk contains more than cow's milk, which has about 4.7 g. The aromas are subtle, and some people perceive a delicate nutty note. How intense this is varies from person to person.

What changes the consistency
Not every serving of donkey milk feels the same. Several factors play a role:
- Temperature: Well chilled, donkey milk tastes fresher and even lighter. When slightly warmed, the sweetness and aroma become more pronounced.
- Thawing: After thawing, milk fat may settle. Gently swirl the bottle before opening so that everything is evenly distributed.
- Thawing speed: Slow thawing in the refrigerator at 2–7 °C is recommended for a uniform consistency.
- The individual animal: Feeding, the season, and the lactation phase influence the composition and thus the mouthfeel.
- Powder or liquid: With donkey milk powder, the mixing ratio determines the consistency. 10 g of powder and 90 ml of water yield about 100 ml. Less water makes the milk slightly richer.
How to properly taste donkey milk
When you try donkey milk for the first time, take a moment. This is how you can recognize the subtleties:
- Preparation: Slowly thaw the frozen donkey milk in the refrigerator. Please follow the preparation instructions on the label.
- Choose a glass: A small, clear glass shows you the color. Donkey milk is usually light and almost white.
- Smell: Pay attention to the scent. It is usually subtle and mild.
- Small sip: Let the milk sit in your mouth for a moment. How heavy or light does it feel? When does the sweetness kick in?
- Compare: For comparison, try a sip of your usual milk. This makes the difference in mouthfeel particularly clear.
What the consistency means for the kitchen
The light consistency has consequences for recipes. In drinks like coffee or tea, donkey milk adds a mild note without becoming heavy. In desserts that need creaminess, it is best to combine it with cream, egg yolk, or chocolate. When frothing, the foam often turns out lighter due to the low fat content. Donkey cheese: consistency in solid form
Texture also plays a role with donkey cheese. About 25 liters of donkey milk are needed for 1 kg of cheese. How the cheese feels depends on the variety and maturation. It is best to try it at room temperature so that the aroma and texture can develop. Take it out of the refrigerator about half an hour beforehand. Ingredients and allergens are listed on the label.
