Does your donkey milk sometimes taste a little sweeter or feel a little lighter? This is no coincidence and is not a defect. Donkey milk is a natural product. Its composition varies depending on the animal, feed, lactation stage, and season. That is why all nutritional values are always averages. In this post, we explain where these differences come from and how you can interpret them.

0.3–1.8 gfat per 100 ml, approximately—a wide range
6–7 glactose per 100 ml, approximately
1.5–1.9 gprotein per 100 ml, approximately

Why nutritional values are given as ranges

When you look at the nutritional values of donkey milk, you will notice the ranges. Fat, for example, is approximately 0.3–1.8 g per 100 ml, usually less than 1 g. This is not an inaccuracy, but reflects nature. Every donkey is different, and the milk of the same donkey also changes over time.

With cow milk from the supermarket, this is hardly noticeable because the milk from many animals is mixed and often standardized to a fixed fat content. Donkey milk comes from small herds and is not standardized. That is why differences are more noticeable.

Factor 1: The individual animal

Just like with people, donkeys also have individual differences. Age, breed, body build, and the number of previous foals can influence the milk. Two donkeys on the same farm do not produce exactly the same milk, either in quantity or in composition.

Factor 2: The lactation stage

Lactation is the period during which a donkey gives milk after giving birth. At the beginning, the milk looks different than a few months later. The fat and protein content change over time. The daily quantity also fluctuates. On average, a donkey produces about 1–2 liters per day in addition to the milk for its foal. You can find more about the quantity in the post How much milk does a donkey produce?.

Factor 3: Feed and season

Donkeys mainly eat hay, straw, and grass. Depending on the season, what grows in the pasture changes and how much hay is fed. The feed can, for example, influence the fatty acid profile of the milk and thus also subtle nuances in taste.

Temperature and weather also play a role because they change the behavior and needs of the animals. These influences are natural and cannot be fully controlled.

How this makes itself noticeable in the glass

The differences are mainly noticeable in nuances:

  • Sweetness: The lactose content is relatively stable and is approximately 6–7 g per 100 ml. The light sweetness therefore remains typical.
  • Mouthfeel: With a little more fat, the milk feels a little fuller; with less fat, it feels lighter.
  • Aroma: Feed and season can cause subtle differences in scent and aftertaste.
  • Temperature: How cold you drink the milk also changes the impression. Well chilled, it feels fresher.

We explain what makes up the basic taste of donkey milk in the post What does donkey milk taste like?.

What stays the same

Despite natural fluctuations, there are fixed processes. At DON DONKEY'S, the donkey milk is hand-milked on European farms, laboratory-tested in Germany, and delivered to you frozen. At home, you store it at −18 °C and slowly thaw it in the refrigerator at 2–7 °C. Slight differences between two bottles are normal. Please always follow the instructions on the label.

Frequently asked questions

Why does my donkey milk taste different than last time?

Donkey milk is a natural product. The animal, lactation stage, feed, and season influence the composition and taste. Slight differences are normal.

Why are ranges given for donkey milk instead of fixed values?

Because the composition naturally fluctuates and donkey milk is not standardized to a fixed fat content.

Does the lactose content change significantly?

The lactose content is relatively stable and is approximately 6–7 g per 100 ml. The fat content fluctuates more significantly.

Is thinner milk a quality defect?

No. Donkey milk is naturally thinner than whole cow milk, and the fat content fluctuates. If you have questions about a product, feel free to contact us.
