Baked apples are a staple of the cold season, like cookies and candlelight. Instead of vanilla sauce, this recipe features a light vanilla foam made from donkey milk. It is gently heated and frothed, preserving its delicate milky flavor.
Ingredients
Baked apples:
- 4 tart apples, e.g. Boskop
- 40 g chopped walnuts or almonds
- 30 g raisins
- 2 tbsp honey
- 1 tsp cinnamon
- 20 g butter
Vanilla foam:
- 200 ml donkey milk (thawed)
- Scraped seeds from half a vanilla pod
- 1 tsp sugar
Preparation
- Prepare the apples: Wash the apples and generously core them from the top. Preheat the oven to 180 °C (conventional heat).
- Fill: Mix the nuts, raisins, honey and cinnamon and fill the apples with the mixture. Place a small knob of butter on top of each apple.
- Bake: Bake in a casserole dish for 25–30 minutes until the apples are soft.
- Prepare the foam: Gently heat the donkey milk with the vanilla seeds and sugar over low heat until it is nice and warm. Do not let it boil. Then froth with a milk frother.
- Serve: Place the baked apples on plates and pour the vanilla foam over them just before serving.
Tips
- Because of the low fat content of donkey milk, the foam collapses slightly faster, so froth it just before serving.
- With donkey milk powder: Dissolve 20 g of powder in 180 ml of warm water.
- Cranberries or chopped dates also work instead of raisins.
