French toast is made by soaking slices of bread in an egg-milk mixture and frying them until golden brown – and with donkey milk, they become particularly tender and light. The recipe is ideal for stale bread and rolls and takes just 20 minutes. Internationally, the dish is known as French toast or pain perdu – “lost bread.”
Ingredients for 2 people
- 4 slices of stale white bread, brioche, or milk rolls
- 2 eggs
- 150 ml donkey milk (thawed)
- 1 tbsp sugar
- 1 pinch of salt
- a little vanilla and cinnamon
- butter for frying
Preparation
- Whisk the egg mixture: Whisk the eggs, donkey milk, sugar, salt, vanilla, and cinnamon together in a shallow dish.
- Soak: Soak the bread slices for about 20–30 seconds on each side. They should absorb the mixture completely without falling apart.
- Fry: Melt the butter in a pan over medium heat and fry the slices for 2–3 minutes on each side until golden brown.
- Serve: Serve immediately with your choice of topping.
Which bread is best?
| Bread | Result |
|---|---|
| Stale white bread | Classic, absorbs well |
| Brioche or braided yeast bread | Particularly soft and lightly sweet |
| Milk rolls | Perfect for using up leftovers – recipe for milk rolls with donkey milk powder |
| Fresh bread | Becomes soggy quickly – it is better to let it dry out first |
Toppings
- Cinnamon and sugar – the classic
- Berries and powdered sugar
- Apple compote or plum jam
- Maple syrup and chopped nuts
- Vanilla cream made from gently warmed donkey milk – as in the baked apple with vanilla cream recipe
Savory version
Omit the sugar, vanilla, and cinnamon, and season instead with salt, pepper, and a little nutmeg. After frying, serve with chives, a fried egg, or some grated cheese.
Tips
- Do not soak for too long: Donkey milk is thinner than cow’s milk and is absorbed quickly.
- Medium heat: If the heat is too high, the slices will become dark on the outside without cooking through.
- Keep warm: Keep the finished slices warm in the oven at 80 °C.
- Using powder: Dissolve 15 g of donkey milk powder in 135 ml of water.
